Browned Butter Chocolate Chip Cookies

Ingredients
  

  • ¾ cup salted butter If using unsalted butter, add ¼ teaspoon salt to flour mix
  • 1 ½ cup all-purpose flour spooned & levelled
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¾ cup brown sugar packed
  • ¼ cup granulated white sugar
  • 1 egg room temp
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 1 7oz chocolate bar (dark/milk) chocolate chips work great too
  • 1 tsp flaky sea salt for topping

Instructions
 

  • Preheat oven to 350℉. Line two large baking sheets with parchment paper.
  • Add (¾ cup) of butter to saucepan and melt. Allow to brown - stirring gently for about 5-10 mins until nicely darkened, and nutty-smelling.
  • In meantime, combine (1 ½) cups of flour, (½ )tsp baking soda, (½) tsp baking powder in a medium bowl.
  • Once butter is browned pour into a small bowl, and then place the small bowl into a larger bowl that is filled with ice and cold water. Whisk gently for 5-10 mins until the butter solidifies into the consistency of very soft room-temp butter. Make sure not to let the ice or water pool into the butter.
  • Move the small bowl away from the icy water, and using a hand mixer fluff gently. Add ¾ packed brown sugar and ¼ granulated white sugar.
  • Add 1 egg + 1 egg yolk, and 1 tbsp of vanilla extract. Mix on high speed for a few minutes, until fluffy.
  • It will not look like regular creamed butter and sugar - it should look more grainy.
  • Add dry ingredients to wet ingredients using a spatula/spoon, mix until combined.
  • Fold in the chopped chocolate (or 1 full bag of chocolate chips). Combine until evenly distributed.
  • Using an ice-cream scoop, scoop a slightly overfilled ball onto the baking sheet, making sure there's about 2" of space between cookies.
  • Chill in the fridge for 20-30 mins.
  • Bake for 10-12 minutes until the center is very slightly under. Once it cools this will be the best part.
  • Allow to cool for 5-10 mins before moving to a cooling rack/plate. And allow to cool an additional 10 mins. Enjoy!
