Collect your onion skins – Don’t wait until the last minute! Start saving onion skins weeks in advance. You'll need enough to fill a pot with just the dried peels. Make sure to discard of any moist peels. You will only need dry flaky outer shells of the onions.
Prepare the dye bath – Add the onion skins to a pot and fill it with water. Bring to a boil.
Boil the eggs in the dye bath – Place your eggs directly in the pot with the onion skins and let them boil for at least an hour (preferably 2). Yes, this will technically "overcook" the eggs, but don’t worry—the taste is the same, and the shells will peel beautifully! You can also keep boiling until the color looks the way you want.
Steep & shine them up – Leave the eggs in the dye bath until the water is cool, and here’s my secret tip: Once dry, rub them with a tiny bit of oil for a gorgeous, glossy finish!
