Long time no see my sweet readers! It’s been a tough few weeks that have eaten up both time and energy. But to make up for it I bring you energy bites!

It’s the new year, and with that come new year resolutions! Now I know it’s cliche to try and lose weight, but let’s be real with COVID lockdowns, and the holiday comfort foods, it’s inevitable that some of us put on some weight. Obviously, by some of us, I mean me and the hubs.

Well, in an effort to shed a couple pounds, we’ve been trying to do some intermittent fasting, and while I was researching I came upon snack ideas, but none of them felt “right”. I didn’t want celery and hummus, I didn’t want fruit…I wanted COOKIES, I wanted muffins, all the stuff I cannot have!
Let me just say, while this energy bite is not, by any means a fresh baked cookie, I’d be lying if it was, but it is d-e-l-i-c-i-o-u-s. These hit the spot for that sweet, chewy, slightly crunchy snack that tricks your brain it just had a baked good.




The recipe itself is barely even a recipe it’s so simple!
4 Ingredient Energy Bites
Ingredients
- 1 cup large whole oats
- 3 tbsp peanut butter (smooth)
- ¼ cup chocolate chips
- 1 tbsp honey
- 2 tbsp chia seeds (optional)
Instructions
- Combine all ingredients into a bowl, stir until completely combined.
- Scoop a tablespoon's worth into your palm, and roll into a ball. You can eat right away, but they may be a tad crumbly. Allow to set for a few hours and they'll be more consistent.
