Incredibly Easy Stovetop Apple Butter

If fall had a spread, it would be apple butter!

It’s warm, spiced, ridiculously cozy, and makes your entire house smell like you’ve spent the day being some kind of wholesome pioneer woman — when really, you just cooked the absolute life out of some apples.

And somehow, my picky kids love this stuff.

You know the kids who can detect a microscopic speck of something suspicious in their food? Who suddenly hate the exact same apple they happily ate yesterday because this one tastes different?

Yeah. Those kids.

Apparently if you cook apples down with brown sugar and cinnamon until they’re sweet, silky and basically taste like fall in a jar, all previous objections are forgotten.

Apple butter has also become one of my favorite ways to use up a ridiculous amount of apples in the fall. It’s rich and concentrated, not overly complicated to make, and once there’s a jar in the fridge, we put it on pretty much everything.

Toast? Obviously.

Pancakes and waffles? Yep.

Oatmeal? So good.

Straight off the spoon while standing in front of the fridge? Mind your business.

Wait… Where’s the Butter?

Despite the name, there’s no actual butter in apple butter.

It’s essentially applesauce that has been allowed to reach its full potential. Think “I-can-fix-him” but in apple form and it actually pans out.

You cook the apples with sugar and warm spices until they’re completely soft, blend everything smooth, and then keep cooking it down until it becomes thick, dark and almost caramelized.

Equipment

  • Saucepan

Ingredients

  • 6 lbs tart apples (any will do)
  • 3 cups light brown sugar
  • ½ cup apple cider vinegar
  • 2 cups water
  • 2 tbsp apple pie spice (or cinnamon if you don't have this on hand)
  • 4 tbsp pure vanilla extract

Instructions

  • Wash, peel, and core all apples. Then cut up into large chunks.
  • Combine all ingredients in a large stock pot or if using less apples, a large saucepan.
  • Cook on medium- heat for roughly an hour, until apples have steamed and cooked down.
  • Using the immersion blender, blend all the apples into applesauce.
  • Now reduce heat to medium-low and allow to cook for 2-3 hours until the apples have browned and significantly reduced. Blend again for extra smoothness – trust me, just blend twice as long as you think you need. It will make it silky!
  • Enjoy!

That’s what gives apple butter that deeper flavour and spreadable texture — and why it tastes so much richer than regular applesauce.

What Kind of Apples Should I Use?

I’m on team I-have-an-apple-tree-in-my-yard so I just use those, but honestly most tart apples do the trick (such as McIntosh).

Sweet apples give you that naturally sugary apple flavour, while adding a tart variety keeps the finished apple butter from becoming one-note sweet.

Honeycrisp, Gala, Fuji, Pink Lady, Granny Smith — use what you like, use what’s on sale, or use the mountain of apples your family enthusiastically picked and then mysteriously stopped eating three days later.

Apple butter does not judge your apples.

Prep Your Apples

Wash the apples WELL. Peel and core the apples, then roughly chop them into chunks.

And I do mean roughly. Please don’t spend your afternoon trying to create beautifully uniform apple cubes. We’re about to cook them into oblivion and blend them.

Do as I say, not as I do – invest in an apple peeler! My hands were RAW after peeling quite literally hundreds of apples every year – and this thing is heaven-sent and I’ll never go back!

Anyways…

Throw everything into your pot, add your sugar and spices, give it a stir and get it cooking.

Let The Apple Butter Cook

Now we wait.

As the apples cook, they’ll soften, release their juices and eventually start falling apart. Your kitchen will also begin smelling offensively good.

Once they’re completely soft, blend everything until silky smooth. An immersion blender is easiest because you can do it right in the pot and, more importantly, there are fewer dishes.

At this stage, congratulations.

You’ve made applesauce.

But we’re not making applesauce.

Cook the Heck Out of It

This is where the magic happens.

Keep cooking the blended apples low and slow. The mixture will gradually reduce, thicken and change from a light apple colour to a gorgeous deep caramel brown.

Don’t rush this part.

That extra cooking time is what concentrates all that apple flavour and turns your very nice applesauce into ohhh, okay, I get why people make apple butter.

It’s ready when it’s thick, glossy and properly spreadable rather than runny.

The Picky-Kid Test

The real test in this house isn’t whether I think something tastes good.

It’s whether the children will eat it without conducting a full forensic investigation first.

And somehow, apple butter passes.

It’s sweet enough to feel like a treat, completely smooth so there are no suspicious “bits,” and tastes mostly like apples and cinnamon had a very delicious baby.

Spread it on toast, English muffins, pancakes or waffles. Stir it into oatmeal or yogurt. Put it on a warm biscuit.

Or hand your kid a spoonful and enjoy your approximately four seconds of parental victory.

I’ll take them where I can get them.
